Crumb Apricot Cheesecake

LOVE cheese and apricot together. Apricot cheese Danish is one of my favorite things in life. So this seems like a very good idea.
Ingredients
For the pastry:
  • Flour-2½cups
  • Butter- 1 cup/250 gr.
  • Sugar- 1 cup
  • Egg- 1
  • Baking powder-1/2 tsp
For the filling:
  • Apricots- 12
  • Farmer’s Cheese (Tvorog)/Cream Cheese- 500 gr/16 oz
  • Eggs -2
  • Sugar- 1 cup
  • Semolina- 2 tbsp.
  • Vanilla bean/Vanilla extract- seeds from 1 vanilla bean/ 1 tsp.
  • Ground Almonds ( for the topping)- ¼ cup

Spicy Pineapple Chicken Kabobs

Spicy Pineapple Chicken Kabobs are perfect for the grill! A delicious combo of spicy and sweet.
Ingredients
  • 1 pound package of Gold'n Plump All Natural Boneless Skinless Chicken Breast Portions
  • 1 bag of mini orange, red and yellow peppers
  • 1 onion
  • 20 oz can pineapple chunks, pineapple juice reserved
Pineapple Marinade:
  • 1/4 cup pineapple juice
  • 2 tablespoons soy sauce
  • 3 tablespoons honey
  • 2 tablespoons vinegar
  • 1 teaspoon sesame oil
  • 1/4 teaspoon ginger
  • 1/4 teaspoon garlic powder
  • 2 tablespoons olive oil
Pineapple Grilling Sauce:
  • 1/2 cup pineapple juice
  • 2 tablespoons honey
  • 1 tablespoon sriracha sauce
  • 1 tablespoon olive oil
  • 1 teaspoon soy sauce

Chunky Lentil and Vegetable Soup

Chunky Lentil & Vegetable Soup. This was really good and everyone liked it. I used half the cumin and pinto beans instead of black because that's what we had. I also used celery seeds instead of whole celery because we didn't have any. Also, a pinch of red pepper flakes instead of cayenne pepper.
Ingredients
  • 2 Tbsp olive oil
  • 2 cloves garlic
  • 1 medium onion
  • ½ lb. (3-4) carrots
  • 3 ribs celery
  • 1 (15 oz.) can black beans
  • 1 cup brown lentils
  • 1 tsp cumin
  • 1 tsp oregano
  • ½ tsp smoked paprika
  • ¼ tsp cayenne pepper
  • Freshly ground black pepper
  • 1 (15 oz.) can petite diced tomatoes
  • 4 cups vegetable broth
  • ½ tsp salt

Chicken Bacon Ranch Wrap Bites

great for a summer potluck (the only cooked part is the bacon) or taking a lunch to new parents or anyone else who finds their arms suddenly busy with other tasks than making lunch.

  • Wrap (I used a garlic pesto flavor, but you could use whatever you want)
  • Ranch dressing powder packet
  • 8 oz. cream cheese
  • Spoonful of sour cream
  • Bacon – cooked
  • Chicken (I used deli sliced chicken)

Crock Pot Cream Cheese Chicken Chili

Slow Cooker White Chicken Chili with Cream Cheese - easy and yummy crock pot meal. Add rice to make it more filling.
